Roast Beef w/

You’ll Need: 1 Grass-fed Eye of Round Roast, Salt, Pepper, Olive oil

Let roast come to room temperature outside of the fridge for 30 minutes.  Preheat oven to 200.   Roll roast in coarse sea salt n pepper, rub with olive oil. Sear on all sides at high heat on a skillet, preferably cast iron or stainless, stick in oven for about 1 hr to finish, until internal temperature reaches 160. Take out, let sit for 10 minutes. Slice thin deli style and serve with sauce of choice (horseradish, steak sauce, mustard). Save leftovers for homemade roast beef wraps with romaine lettuce leaves!

Side of the Day: Cauliflower Mash

Steam a head or 2 of cauliflower till soft. And you don’t need a steamer. Take any pot or pan with a lid,  add fat of choice, toss in chopped cauliflower and some liquid (water/broth) cover and cook till its ready.  watch the liquid! Add too little it may burn, add too much it will be watery. Trial-n-error guys, you’ll figure it out quick! Add butter/olive oil/coconut oil, salt, pepper, splash of cream if u do dairy. Mash, pulse in a food processor whatever works! Sprinkle with grated cheese for extra kick
